Food often tastes better when you are outdoors and if you are planning a camping trip, there will be many nights of open-air meals to look forward to. Instead of relying on rehydrated packs of camp food, why not try a home-made recipe? These ideas are great, whether you’re in a tent, an RV, glamping or backpacking. Cook them over an open fire or a stove, depending on your choice of camping.
1. Pie Iron Pizzas
These pizzas combine pizza ingredients with a grilled cheese-style presentation, and they cook beautifully in a pie iron. This is the sort of camp food that will be reserved for car-to-camping trips or a campervan.
Serves four people.
Ingredients
- 14 ounces of Pillsbury Pizza Crust Dough
- 12 ounces shredded mozzarella cheese
- 9 ounces sliced pepperoni
- 1 cup pizza sauce
(Add any topping you fancy.)
Method
- Unroll your pizza dough, dividing it into four rectangles.
- Coat the inside of each pie iron with non-stick spray.
- Put one half of the pizza dough into one side of the pie iron, and spread the sauce.
- Add the toppings, fold the other half of the dough over the top, and pinch the dough to close your pizza. Close the pie iron and trim any excess dough from around the edges.
- Cook over the fire for about 5 to 10 minutes. Rotate the pie iron as you cook your pizza, and check the outside to make sure it’s toasted brown.
- Take the pizza carefully out of the pie iron and enjoy.
2. Campfire hot dogs
This recipe serves as many as you like – allow for one or two hot dogs and crescent rolls per person.
Ingredients
- Hot dogs
- Pillsbury crescent rolls (or simple hot dog rolls)
Method
- Skewer each hot dog so that the skewer is about three-quarters of the way in. You could simply cook the hot dogs over the fire and add to a roll or follow the more interesting recipe below.
- Open the crescent rolls, and wrap one triangle around each hot dog. First, begin with the flat part of the crescent, and end with the top of the triangle.
- Wrap your rolled hot dogs loosely in foil and roast over the fire for 15 to 20 minutes.
- Serve with your favourite sauces.
3. Walking Tacos
This recipe serves as many as you like, depending on the number of bags of crisps and the amount of pulled pork you buy (allow for roughly half cup of pulled pork per person).
Ingredients
- Your favorite pulled pork, pre-prepared
- Small bags of tortilla chips (one per person)
- Shredded cheddar or Monterey Jack cheese
- Shredded lettuce (iceberg or similar)
- Chopped fresh cilantro
- Sour cream
- Pineapple salsa
Method
- Heat the pulled pork according to the package instructions.
- Open the bag of tortilla chips (break them into smaller pieces if you wish). Fold down the sides of the bag so that it forms a bowl.
- For each person, put a hearty spoonful of pulled pork on top of the chips, followed by the cheese, lettuce, salsa, sour cream, and cilantro leaves.
4. Sausage Sauté with Cabbage and Apples
This tasty recipe serves four people.
Ingredients
- 1 tablespoon olive oil
- 1 1/2 pounds (or 6 links) of sweet Italian sausage
- 2 apples, halved (Pink Lady apples or similar)
- 1/2 red onion, sliced
- 1/2 head red cabbage, cut into 1/2-inch-thick slices
- Sea salt
- Freshly ground black pepper
- 1 cup apple cider
- 2 tablespoons apple cider vinegar
Method
- Using a large cast-iron skillet, heat the oil over medium-high heat (be careful with an open fire or use a camping stove for better heat control). and sauté the sausage. Turn the links occasionally and sauté them till they are nice and brown (about 8 minutes). Set them aside on a plate.
- Reduce the heat to medium. Put in the apple halves with the cut sides down. Put the pieces of onion and cabbage around the apples, and season with salt and pepper.
- Cook for about 4 minutes, stirring the onions (leaving the apples facing down), till the apples are golden brown.
- Now turn over the apples and put the sausages back into the skillet. Tuck them in amongst the veggies, and add the apple cider and cider vinegar.
- Let the sausage mixture simmer while occasionally stirring for about 20 minutes or till the apples are tender and the sausage links are fully cooked (no longer pink inside).
5. Hearty Breakfast Sandwiches
Serves four people.
Ingredients
- Butter as needed
- 4 English muffins (regular or sourdough)
- 2 cups pulled pork, pre-prepared (or cooked sausages or bacon slices)
- 4 eggs
- 4 slices cheddar cheese
- Or add salad for a BLT.
Method
- Using a cast-iron skillet, melt some butter and toast the English muffins till they’re crispy. Remove them from the pan and set them aside on a plate.
- Reheat your pulled pork (or sausage) and set aside.
- Fry the eggs (using more butter, if needed).
- Fill each toasted English muffin with 1/2 cup pulled pork, one fried egg, and a slice of cheddar cheese.
- Wrap your sandwiches in foil and put them over the fire for a few minutes, just enough time to melt the cheese.
- Serve and enjoy.
